Pumpkin Protein Snack Bars
Ingredients – Pumpkin Protein Snack Bars
1 ½ cups canned pumpkin
¾ cup egg whites
1 teaspoon pure vanilla extract

½ cup Truvia
1 cup quick oats
¼ cup chopped pecans, can use additional ¼ cup for toppings
Preheat your oven to 350°F and grease an 8×8 pan with cooking spray.
In a large bowl, stir together the pumpkin, egg whites, maple syrup and vanilla extract
In a small bowl, stir together the protein powder and Truvia
Add the Protein and Truvia gradually into the mixture, then add the quick oats and stir until well combined.
Pour batter into the greased pan and smooth out. Sprinkle with chopped pecans (optional)
Bake until the center feels set and edges slightly pulls away from the side, about 35-40 minutes.
Let cool completely, slice, and enjoy! Bars can be kept refrigerated for up to 1 week.
