Chocolate Chip Protein Pan Cookie

1/4 cup Stevia
1/2 cup almond butter (or peanut butter)
1/2 tsp baking soda
1/2 tsp salt
1 egg or 1/3 cup egg whites
1/2 tsp vanilla extract
3/4 cup almond milk
1 Cup Chocolate chips (Can use dairy free)
Directions: Preheat oven to 350 degrees.
Microwave almond butter in a microwave safe dish – approximately 20-30 seconds or until easy to mix. Mix almond butter and stevia thoroughly. Add egg (or egg whites), vanilla extract, and almond milk. Mix in protein powder, baking soda and salt in a separate bowl. Combine all ingredients until batter like consistency, then fold in chocolate chips gradually.
If the batter is too thick you can add more almond milk to achieve desired consistency. Batter should be just a little runnier than normal as the protein powder will absorb some of the extra moisture.
Pour into a greased 8×8 baking dish. Bake for 24-26 minutes. Pan Cookie is done when you can insert a toothpick into the center and come out clean.
